Saturday’s competition is Kansas City Barbeque Society (KCBS) sanctioned. Team entries are judged and scored according to KCBS guidelines and rules. Food categories include: chicken, pork ribs, pork butt/shoulder, and beef brisket. The scores of these four categories determines the Grand Champion. Optional categories will be Hawaiian themed..
Sunday’s events include both the Outdoor Cooking Contest, Rib-Oink Off and Whole Hog. The Outdoor Cooking Contest allows it all, as long as it is done outdoors: grilling, smoking, frying, baking, steaming, braising, using whatever fuel source you want. Categories will be heavily influenced by the Hawaiian theme. The Rib-Oink Off is a stand alone contest. Teams may independently enter either or both contests. There is a discount when entering both Sunday events.
